The El Gobiado Estate is owned by the Alfaro Family in El Salvador. which is known for its high altitude and ideal climate for growing coffee. Coffee is grown on the El Gobiado Estate and is planted with the Bourbon and Pacas varietals which are grown under the shade of Inga trees, helping to reduce light intensity as well as retaining soil moisture. Coffee from El Gobiado is delivered in cherry form to the local El Carmen Mill where it is pulped, fermented and fully washed with pure spring water and sun dried on African beds and patios for a period of up to 14 days. Once fully dried, the coffee is stored in parchment in wooden silos and rested for approximately 30 days to ensure balance and consisntency in the cup.
